If you feed people for a living, you already know the difference between "produce" and a relationship with a farm. These are the trade categories we keep on speed-dial — and roughly what each program looks like on a Tuesday morning.

    Fine-dining & chef tables

    Restaurant kitchens, tasting menus, hotel F&B. Standing weekly orders, microgreens and edible flowers on rotation, and a phone call when the heirloom tomatoes finally come on. Minimum opening order: 6 mixed cases.

    Caterers & event producers

    Weddings, corporate buyouts, popup dinners, holiday banquets. One-off event buys scaled to headcount, with a 72-hour confirmed harvest window. Minimum opening order: 10 cases per event.

    Schools & higher-ed cafeterias

    K-12 food service, college dining halls, independent academies. Term contracts aligned to the academic calendar, with a documentation packet ready for nutrition directors. Minimum opening order: 15 cases per delivery.

    Nursing homes & healthcare kitchens

    Skilled-nursing facilities, assisted-living campuses, hospital kitchens. Soft-texture produce, IDDSI-friendly prep notes on request, and steady weekly volume. Minimum opening order: 12 cases per delivery.

Standing Weekly Order

A recurring delivery slot — same day, same driver, same case mix — billed on a weekly net-7 statement. Set it once in October and the farm does the rest through July.

What's the minimum opening order?
By category: fine-dining 6 mixed cases, catering 10 per event, schools 15 per delivery, healthcare 12 per delivery. No contract minimums — just enough volume for our driver to make the route worth running.
Which days do you deliver?
Standing weekly orders run Monday through Thursday inside our 25-mile same-day radius. Orders placed by 11am qualify for next-day delivery; weekend and Friday deliveries are routed through our Gleaning Wilson's surplus channel.
What are your payment terms?
Net-7 for standing weekly accounts (ACH or check). Net-30 for institutional and academic accounts. One-off event buys require a 50% deposit at quote acceptance, with the balance on delivery. We're happy to walk through paperwork on the first call.
How do substitutions work?
Every standing order ships with a written substitution matrix agreed up front — typically a same-family swap at equal or lower case price. For event buys, we lock the case mix 48 hours out and notify you of any weather-driven change before the truck rolls.
What food-safety documentation can you provide?
USDA Organic certificate (210 acres), Bee Better Certified pollinator-crop statement, third-party residue testing on request, and a current GAP audit summary. Liability insurance certificate and W-9 are on the standard new-account packet.
